Agro-pastoral programs in southern European areas have been subjected to varied disturbances in the previous few a long time. Still, a specific amount of resilience allowed to face up to its sharp decline. The Serra da Estrela cheese manufacturing, the most consultant agro-pastoral system of the Portuguese Centro Region, is a demonstrative case research. The important goal of this analysis is to grasp the trajectory of this technique as much as current, its adaptation to inner and exterior modifications and evolution traits. We used the ideas of resilience and socio–ecological system as framework in a qualitative research. Participatory strategies had been utilized utilizing the views of native actors, in order to establish and analyze the key components. The important drivers are socio-demographic (ageing, depopulation, social notion of the occupation), financial (free market, industrialization), political (lack of sufficient of nationwide and European insurance policies) and environmental (local weather change, forest fires). Our outcomes are in line with different European circumstances. To deal with these traits, the system is irreversibly reworking, shifting into a brand new trajectory characterised by totally different systemic structure. In face of the ongoing modifications, the interactions between the social and the ecological subsystems are blurring, whereas native communities and traditions are being excluded.
